What’s on the Menu? Holiday Favorites

With preparation for the holidays in full swing, and some speculation as to whether or not this is in fact “the most wonderful time of the year,” one thing we all agree on and look forward to is delightful dishes and festive feasts throughout the entire holiday season.

We asked some of our chefs to share their favorite holiday dish, and here’s what they had to say:

Lefse Krumkake and Fried Rosette

Lefse, Krumkake, & Fried Rosettes

I grew up eating the holiday treats of Norway. Lefse (a potato flatbread), Krumkake (a cone shaped cookie) and Fried Rosettes. Every Christmas I try to find Lefse especially, and I hope one day that I’ll start making it myself.

My go-to dish to make for the holidays, or just any time, are my signature salted chocolate chip cookies!

Green Chile- Enchiladas and Pumpkin Pie

Turkey Enchiladas & Pumpkin Pie

After Thanksgiving, it is tradition for our family to make red or green chile turkey enchiladas! Then, for Christmas we always have pie for breakfast because we’re usually too full to eat it after dinner. I’m a pumpkin pie person, however, tradition is a little piece of each kind with lashings of fresh whipped cream.

Sweet Potato Casserole

Sweet Potato Casserole

My favorite dish is sweet potato casserole. It’s like eating dessert with dinner, and you can’t get any better than that! My recipe includes:

  • Sweet Potatoes
  • Salt
  • Brown Sugar
  • Walnuts
  • Marshmallows
  • Cinnamon
  • Nutmeg
  • Clove
  • Splash of Bourbon 🙂
